Profile of a culinary artist

Born in Trento in 1977, Giuliano Baldessari grew up in Roncegno Terme. His roots are very important: immersed in the Trentino town, an important spa destination with many hotels and restaurants, Baldessari had always envisioned his future in the kitchen. This innate passion led him to pursue catering studies and travel the world to learn the trade from some of the most important chefs. These experiences have borne fruit by allowing him to open Aqua Crua, his first restaurant, and to receive the coveted Michelin star.
